Alumna Casie Benson has come full circle at Galveston College, stepping into the role
of Culinary Arts program director in the same kitchens where her journey began and
where she will now inspire future chefs.
Benson, who earned her associate degree in Culinary Arts and advanced culinary certifications
from GC, has built an impressive career in both the culinary and education fields.
She has worked as a personal chef, event coordinator, and owner of Belles and Beaches
Catering and Events, while also serving as an adjunct culinary instructor at GC and
teaching for the Osher Lifelong Learning Institute.
“From my very first day of culinary school, I knew I wanted to work at Galveston College,”
said Benson. “Being surrounded by so much potential, students who are eager to learn
and instructors passionate about teaching, I felt inspired. This role allows me to
give back to the same community that shaped my own career.”
Benson’s vision for the program centers on growth, innovation and strong community
ties. She aims to expand enrollment, strengthen partnerships with local restaurants
and hospitality businesses, and provide students with a dynamic, hands-on learning
experience that prepares them for real-world culinary careers.
“I want our students to graduate not only with exceptional culinary skills, but with
the confidence, professionalism and work ethic to thrive in any kitchen or career
path,” said Benson. “We’ll focus on critical thinking, teamwork and time management,
skills that are just as important as knowing how to execute a perfect dish.”
Benson plans to keep the curriculum fresh by incorporating sustainability and zero-waste
cooking practices, sourcing local ingredients and staying engaged with industry trends
through ongoing professional development. She also intends to create more opportunities
for students to connect with the community through special events, guest chef workshops
and service projects.
Her inspiration for cooking came early from her mother, whose home-cooked dinners
were prepared with care and love. Benson’s passion for teaching, however, was sparked
by her mentor, Chef Paul Mendoza, who retired from GC in May.
“He’s been such a fantastic mentor and example of what it means to lead with knowledge,
passion and heart,” said Benson. “I hope to carry forward that same spirit.”
Benson’s advice for aspiring chefs reflects her own career path.
“Don’t give up,” said Benson. “This industry can be tough, but it’s incredibly rewarding
if you stay committed and passionate. If it’s worth doing, do it right. Take pride
in your work, pay attention to details and show up every day ready to learn.”
With her experience, vision and deep connection to GC, Benson is poised to guide the
college’s Culinary Arts program to new heights, continuing a tradition of excellence
while bringing her own creative flavor to the mix.
